Guidelines for Health Education Curricula
The Centers for Disease Control in Atlanta published guidelines for health education curricula for grades pre-K to 12. Guideline 5 calls for health education to provide students with the knowledge, attitudes, skills and experiences for lifelong healthy eating. This FREE tutorial has been developed for students in grades 8-10 and is designed to provide teens with the information and skills they need to develop lifelong healthy eating habits.
If your student is in grade 8, 9 or 10, you are in the right place! This four week tutorial assumes your student has not yet taken high school biology or chemistry. Currently nutrition and cooking courses are not required for graduation from high school. Home economics courses have gone by the wayside. By failing to provide nutrition and meal planning as instructional components in high school health education programs, we as a society will continue to suffer negative public health consequences.
We will see increasing obesity. More family members will suffer from the diseases associated with poor diet such as Type-2 diabetes and heart disease. In addition, we will continue to see increases in poor birth outcomes. We know that nutrition education can reduce the number of children with autism and ADHD. Youth must develop an understanding of how dietary choices relate to the development of obesity, poor birth outcomes and the development of disease over time. This is why we need to provide health education that focuses on nutrition and healthy diet.
History of Tutorial Development
Components in this tutorial have been used successfully in three clinical trials to help participants improve their health outcomes. Participants included college students and parents of learning disabled children. Dr. Renee Dufault created the curriculum for this tutorial. It consists of an easy to read book, kitchen activities, videos, and discussion questions designed to help your teen learn the skills s/he needs to develop lifelong healthy eating habits. Dr. Dufault's Qualifications
Dr. Dufault earned her doctorate degree in Health Education at A.T. Still University. She is a renown researcher and has published a number of articles on the role of diet in creating conditions for autism, ADHD and Type-2 diabetes. Your role is to guide your student through each of the four modules of instruction. Make sure your student completes all of the activities and reading assignments in order. I would highly recommend you do the activities along side your student. Your student will need to find a recipe and cook a meal at least twice during the four week tutorial. You will need to make sure s/he has access to the ingredients. You may need to take your student grocery shopping.
There are discussion questions in each module of instruction and to engage your student in each discussion you will need to have read the assigned book chapter yourself. If your student is a struggling reader, you can download and print off the reading guides at the bottom of this page. Each module of instruction that involves reading a book chapter has a reading guide. The reading guide acts as a scavenger hunt to ensure the student learns the take home lessons but will not replace the act of reading the chapter in its entirety.
